Hélène Darroze, from a family of cooks in south-west France, has run the restaurant at The Connaught since 2008. Her cooking is built on exceptional seasonal produce, much of it from British farms and fishermen, and the menu is presented on a board of marbles marking each ingredient, from which you choose.
